Target costs

Target costs let you record what a beer should cost to make, so that Breww can compare your real batch costs against them. Targets are set per litre of liquid, plus an extra amount per packaged item for each container type and packaging format you use.

Target costs feed the COGS vs target report, which is where you see actual costs measured against them.

How target costs are structured

There are two kinds of target for each beer:

  • Liquid - the base cost of producing each litre (or your brewery's production volume unit) of that beer, before it is packaged. This is a single figure per beer.
  • Packaging - the extra cost of putting that liquid into a container, on top of the liquid cost. You can set this per container type (for example, a 30L keg), and optionally per packaging format within a container type (for example, a 24-pack of 330ml cans).

Container targets are entered per item and packaging format targets per pack, which is how you would normally think about a keg collar, a can, a tray or a case. Breww stores everything per litre behind the scenes and converts for display, so the totals stay consistent no matter which unit you type into.

If a packaging format has no target of its own, it inherits the target from its container type. Inherited values are shown greyed out so you can tell at a glance which cells are set explicitly and which are being inherited.

Setting target costs

Target costs are edited on a single page covering every beer at once.

  1. Go to ProductionBeers (or your equivalent drink title).
  2. Open the Settings menu at the top right and click Target costs.

The page shows one row per active beer and one column per costing scope: a Liquid column, then a column for each container type, with a sub-column for each of that container's packaging formats.

Type a value into any cell and click out of it (or press Tab) to save. There is no separate save button - each cell saves on its own, and a short confirmation appears under the cell. Clearing a cell and tabbing out removes that target.

As you type a packaging target, Breww shows a small line underneath the cell with the combined total per item or per pack, including the liquid share. This makes it easy to sanity-check a target against what you actually charge.

Suggested targets

Breww can suggest a starting figure for every cell:

  • Liquid suggestions come from the current version of the beer's recipe, using the recipe's ingredient additions priced at the expected purchase price for each stock item (falling back to the last price you actually paid), divided by the recipe's net batch size.
  • Packaging suggestions come from the default packaging stock items configured on your container types and the stock items on your products, priced the same way.

Where a suggestion differs from the value currently in the cell, a Suggested: <amount> chip appears beneath it with a tick button. Click the tick to accept just that cell.

To fill everything in one go, click Accept all suggestions at the top right. This only fills cells that are currently empty and are not inheriting a value from elsewhere - any cell where you have already made a decision is left alone. Breww confirms afterwards how many targets were added and how many cells were skipped because they already had a value.

If a beer has no recipe, or its recipe's ingredients have no prices, no suggestion is offered for that cell.

Changing targets over time

Costs move, so target costs are versioned by date. Each target can have any number of dated revisions, and a batch is always measured against the revision that was in force on the date the batch was started (in your brewery's time zone). Historic batches therefore keep being compared against the targets that applied at the time.

To schedule a change:

  1. Open the dropdown at the top right of the target costs page (it reads Current targets by default).
  2. Choose + Schedule a change from a date... and pick the date the new costs take effect.
  3. Enter the new values. Cells you don't touch keep carrying forward the value from before that date, shown greyed out as a placeholder.

Once a dated change exists it appears in the same dropdown as From <date> (n costs), so you can come back and edit it. To remove a whole dated change and every target in it, select it in the dropdown and click Remove this dated change.

Selecting Current targets in the dropdown always shows and edits the revision that applies today.

Seeing a beer's targets

Each beer's own page has a Target costs tab showing the targets that apply right now:

  • The liquid base cost per unit, with any upcoming dated changes listed underneath.
  • A table with one row per container type and packaging format, showing the packaging target, the liquid share for that item, and the combined total per item or per pack.
  • Anything inherited from a container type is labelled as such.
  • Any upcoming dated changes for each row, including changes to a container target that a format row will inherit.

If some containers have no target yet, a note at the bottom of the tab links straight back to the target costs page.

The tab is read-only - all editing happens on the target costs page.

Permissions

Setting target costs requires the general production permission. Viewing them on a beer's page requires access to that beer.
